What Exactly Is a Rusk?

If you've never had a South African rusk before, you might be wondering what all the fuss is about. 

A rusk is a twice-baked bread treat that's perfectly crisp, making it ideal for dunking into a hot cup of coffee or tea. Think of it as a cross between a biscuit and a slice of sweet bread - but with a texture and tradition all its own. Unlike cookies, rusks aren't overly sweet, and unlike biscotti, they're softer inside once dunked and made to soak up every last drop of your favorite warm drink. 

The tradition of rusks dates back hundreds of years in South Africa, when families baked bread that would last for weeks without spoiling. By slowly drying the baked dough in the oven, they created a delicious, shelf-stable treat that could be enjoyed whenever the kettle was on.
